In the Profiles list select a profile. Mac allows you select a cursor size that suits you the best. For further adjustment you can change the pointer fill color in macOS Monterey.

Though you can only change the contrast grayscale transparency and inverting screen color so that the cursor becomes more noticeable rather than changing the cursors color. You can view the GitHub.
